One of the most challenging thing about having a blog is being able to constantly feed it with enough inspiration. No matter what the circumstances are and how difficult your present life is, the blog needs to be updated. The feeling of creating an intresting post becomes a dificult task. It undermines my confident and makes me crazy. Like for this post, I despertately stared at the blank page for hours assuming to get filled by its own. My brain refuses to work and I feel I am out of recipes, innovative pictures and props to make things look worth it. Though I have few recipes lying in my draft for quite some time now yet they dont seem good enough to mention. On such days being a blogger is a real curse and I wonder what am I exactly doing here....(It was suppose to be a valentine post though!! )
Coming back to the recipe, the digestive crumbs create the foundation for a creamy, fluffy chocolate and cream cheese mixture that you’ll want to eat with a spoon straight from the mixing bowl with reckless abandon. Try to hold yourself back, though, because finished with chocolate curls and toasted, chopped almonds
Here goes the recipe
Ingredients:
For the Crust12 digestive biscuits, crushed into crumbs
3 tablespoons unsalted butter, melted
For the Filling
1 (8 ounce) package cream cheese, softened
2/3 cup chocolate
1 teaspoon pure vanilla extract
1 (8 ounce) tub frozen whipped topping, thawed
For the Garnish
whipped topping, optional
chocolate shavings, optional
toasted, chopped almonds, optional
Method:
In a medium bowl, stir together the digestive crumbs and melted butter. Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer.
2. In a large bowl, with an electric mixer, beat the cream cheese and chocolate until smooth. Add vanilla and mix to combine. Using a rubber spatula, fold in the whipped topping until well blended and no streaks remain.
3. Evenly pipe or spoon the filling into individual serving dishes. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
4. If desired, garnish with additional whipped topping, chocolate shavings, and/or toasted, chopped nuts
